City planners and citizens often see gardens as spaces for urban beautification projects. However, urban agriculture and growing food in cities is becoming an increasingly accepted use of public green spaces. This article examines how gardeners and the City of Vancouver negotiate space while trying to create green cities, greater awareness of food security issues, and community in urban environments. These gardens show how local discourses of health, environment, and food production are created through this process of appropriating urban spaces for horticultural activities. Based on ethnographic fieldwork, this paper explores the development of spontaneous and grassroots urban agriculture movements in Vancouver. This research was carried out from 2006 to 2008 while the city was preparing for the 2010 Winter Olympic Games. At this time, Vancouverites, local officials, and Games organizers were concerned about putting on a “green” Games. As the media spotlight began to fall on Vancouver, urban agriculture became a very public demonstration of the city’s environmental awareness. This article looks at how, at a particular historic moment, grassroots gardening movements gained mainstream acceptance and played a role in constructing the city’s image as an environmentally aware urban place with a high standard of living.

Les jardins sont souvent seulement perçus par les citoyens et les urbanistes comme des éléments d’embellissement des espaces urbains. Cependant, l'idée d'utiliser les espaces verts pour la production de nourriture au sein des villes semble s'imposer de plus en plus. La recherche présentée dans cet article explore le développement de mouvements citoyens d'agriculture urbaine à Vancouver. Ce travail ethnographique de terrain a été réalisé de 2006 à 2008, lors des préparations pour les Jeux Olympiques d'Hiver de 2010. L'organisation de Jeux "verts" était alors au centre des préoccupations des habitants de Vancouver, des responsables locaux et des organisateurs des Jeux. À mesure que la couverture médiatique de Vancouver s'est intensifiée, l'agriculture urbaine est devenue un symbole fort de la conscience environnementale de la ville. Cet article examine le rapport entre l'administration de la ville de Vancouver et les jardiniers dans les contextes de création de villes plus écologiques, d'une plus grande prise de conscience de l'insécurité alimentaire, et de la (re)définition des communautés urbaines. Les jardins étudiés dans ce travail révèlent comment les procédés d'appropriation des espaces urbains à des fins horticoles ou agricoles peuvent stimuler, au niveau local, les discussions sur la santé,  l'environnement et la production alimentaire.

This article will build upon research I undertook in co-curating Culinaria: Early 20^th-Century Cookbooks in the Prairies, an online exhibit beginning in late spring 2013 at the Bruce Peel Special Collections Library at the University of Alberta in Edmonton.

Beginning with a personal account illustrating the real-life sharing of recipes that has occurred in the Prairies between cultural groups, this article will trace such sharing in Prairies community cookbooks. As all Prairies settlers dealt with the same relative isolation and limited ingredients, neighbours of differing ethnic groups adapted and exchanged recipes that worked in the Prairies climate. French community cookbooks contain recipes for chop suey (an influence from the Chinese restaurants in nearly every Prairie small town), German community cookbooks contain recipes for cabbage rolls, Ukrainian community cookbooks contain recipes for sauerkraut, and so on. Such sharing in fact enabled somewhat of a common culinary base unique to the Prairies: indeed chop suey, cabbage rolls, and sauerkraut appear in nearly every community cookbook, as do, for related reasons, rhubarb and saskatoon pies.

Food and cookbook history in the Prairies has been little studied, presumably because the only real cookbooks published here in the first half of the twentieth century were community cookbooks (differentiating the Prairies situation from that of Ontario and Quebec), and these books largely survive only in private homes. This is gradually changing, as libraries begin to recognize the value of community cookbooks in reflecting, and contributing to, the culinary history of the Prairies.

Cet article est basé sur le travail de recherche effectué à la Bruce Peel Special Collections Library de University of Alberta à Edmonton pour préparer l'exposition en ligne Culinaria: Early 20^th-Century Cookbooks in the Prairies (qui sera lancée au printemps 2013).

Commençant par un récit personnel illustrant le partage de recettes entre différents groupes culturels des Prairies, cette communication étudie ces échanges au travers des livres de recettes communautaires de la région. Pour faire face au manque d'ingrédients, les colons des Prairies ont été amenés à modifier leurs recettes pour les adapter au climat. Leur isolement les a aussi encouragés à échanger ces recettes. Par exemple, on trouve des recettes de chop suey dans des livres de recettes communautaires français (sans doute sous l'influence des restaurants chinois quasiment omniprésents dans toutes les bourgades des Prairies), des recettes de rouleaux au chou dans les livres des communautés allemandes ou encore des recettes de choucroute dans les livres destinés aux communautés ukrainiennes. Ces échanges ont en fait contribué à établir une base culinaire commune unique aux Prairies. Ainsi le chop suey, les rouleaux au chou, et la choucroute se retrouvent dans presque tous les livres de recettes communautaires. Il en est de même pour les tartes à la rhubarbe et aux amélanches.

L'histoire de la nourriture et des livres de recettes des Prairies n'a reçu que peu d'attention jusqu'à présent. Ceci s'explique sans doute par le fait que, en contraste avec le Québec et l'Ontario, les seuls livres de recettes régionaux ayant vus le jour dans la première moitié du XX^e siècle aient été des livres de recettes communautaires, hors des inventaires des bibliothèques institutionnelles. Cette situation est en train de changer car les bibliothèques semblent maintenant prendre conscience de l'importance de ces ouvrages pour la réflexion, et le développement de l'histoire culinaire des Prairies.

In this article, I explore three Northwest Territories (NWT) cookbooks from the 1960s. The first cookbook, a fundraiser for the Anglican Church in Inuvik, demonstrates the significance of traditional Indigenous food preparations, as well as the integration of imported recipes, adapted to draw resourcefully on northern store provisions of that time. Most, if not all, of the recipes are provided by Indigenous women. The second, published by the Daughters of the Midnight Sun in Yellowknife, is a hospital fundraiser that offers a different perspective - that of an emerging population of newcomers from elsewhere in Canada and the world. While the recipes attest to the diverse roots of settlers in a growing community, they also tell a story of exclusion: one cannot help but wonder at the lack of Indigenous representation among the recipe writers, in a community built within the traditional homelands of the Yellowknives Dene First Nation. The third, published by the Department of Indian Affairs and Northern Development, offers tips to northern “wilderness wives” on nutrition along with recipes that are often out of touch with the availability of certain ingredients in northern communities. Drawing on feminist and postcolonial theory, I critique these cookbooks: analyzing both the recipes and the positionalities of their writers, to explore how the north was imagined by three different, often opposing, perspectives; and offering insight into (persistent) colonial geographies of food and community in the NWT.

J'explore dans cet article trois livres de cuisine des Territoires du Nord-Ouest (TNO) publiés dans les années 60. Le premier de ces ouvrages a servi à lever des fonds pour l'Église Anglicane d'Inuvik. On y découvre un nombre important  de préparations traditionnelles autochtones aux côtés de recettes importées, judicieusement adaptées aux produits disponibles à cette époque. Le second recueil de recettes considéré dans ce travail a été publié par les Daughters of the Midnight Sun de Yellowknife, lui aussi dans le contexte d'une campagne de levée de fonds (pour un hôpital cette fois). Ce livre reflète l'influx important de personnes venant de partout au Canada, et dans le monde,  vers les TNO. Tout en révélant la diversité des origines des nouveaux membres d'une communauté en pleine essor, le choix des recettes incluses dans cette collection nous raconte aussi l'histoire d'une exclusion: celle des auteurs autochtones, étrangement absents de la liste des contributeurs malgré les liens solides qui les relient à cet endroit. Enfin, le troisième ouvrage que j'examine, publié par le Département des Affaires indiennes et du Nord Canadien, fournit aux "wilderness wives" des informations nutritionnelles et des recettes qui ne prennent souvent pas du tout en compte la disponibilité de certains ingrédients dans les communautés du nord du Canada. En m'appuyant sur les théories féministe et post-coloniale j'analyse les recettes de ces recueils ainsi que le positionnement de leurs auteurs pour livrer une critique de ces trois livres. Ce travail permet en outre d'explorer les manières dont les TNO ont été imaginés par trois groupes aux perspectives souvent opposées. Enfin, je soutiens que l'étude effectuée dans cette communication permet de mieux appréhender les géographies coloniales de la nourriture et des communautés des TNO et de révéler leurs effets actuels.
