Résumé
Les choix alimentaires constituent un élément essentiel du travail d’individualisation. Le marché et les conditions d’abondance alimentaire imposent actuellement le régime du choix : aux consommateurs de faire leurs choix et d’en justifier les raisons. Le parcours alimentaire étant primordial, complexe et dynamique, la sociologie se doit d’étudier les expériences des individus, comme point de départ pour l’analyse des grandes tendances. La démarche biographique relève les significations multiples — historique, culturelle, personnelle, sociale — du parcours alimentaire et met en lumière les articulations de l’individu avec ses diverses instances de socialisation : famille, amis, université, profession, ville, pays, virtuel, foi, loisirs, voyages et autres. Sous le régime du choix, le parcours alimentaire se révèle être une série de défis renouvelés journellement et qu’il faut négocier. Cet essai propose un modèle de biographie alimentaire, dont les détails indiquent le dépassement de catégories traditionnelles à l’analyse, telles que la nationalité.

Abstract
Food choices constitute an essential element in the work of individualization. At present the market and conditions of food abundance impose a regime of choice : consumers must make their choices and find justifications for them. Since the food pathway is primordial, complex and dynamic, sociology must examine the experiences of individuals as a starting point to understand large trends. The biographical approach brings out the many meanings — historical, cultural, personal, social — of the food pathway and sheds light on the articulation of the individual with the various instances of his or her socialization : family, friends, university, profession, city, country, virtual, faith, leisure, travel, and so on. Under the regime of choice, the food pathway is a series of challenges renewed daily and that must be negotiated. This essay offers a model of a food biography, whose details reveal the limitations of traditional analytical categories such as nationality.

Resumen
Las opciones alimentarias constituyen un elemento esencial del trabajo de individualización. Actualmente, el mercado y las condiciones de abundancia alimentaria imponen el régimen de las opciones : a los consumidores corresponde escoger y dotarse de razones. Dado que el recorrido alimentario es primordial, así como complejo y dinámico, la sociología debe estudiar las experiencias de los individuos como punto de partida para el análisis de las grandes tendencias. El proceso biográfico presenta las múltiples significaciones — histórica, cultural, personal, social — del recorrido alimentario y saca a la luz las articulaciones del individuo con sus diversas instancias de socialización : familia, amigos, universidad, profesión, ciudad, país, virtual, fe, ocios, viajes y otros. Bajo este régimen de opciones, el recorrido alimentario se presenta como una serie de desafíos renovados cotidianamente que deben ser negociados. Este ensayo propone un modelo de biografía alimentaria cuyos detalles indican el rebasamiento de las categorías tradicionales analizadas, tal como la nacionalidad.
